Incipit is a limited edition wine of 1356 numbered bottles made up from a single vineyard. Three contiguous plots, 650,1118,649, with uniques characteristics in the Valdobbiadene panorama. The amphitheater layout create an unique sun and climate exposition. The vineyard, cultivated by Glera grapes for hundreds of years, sits on submarine soils of limestone and sandstone, rich in fossils, giving to the grapes an excellent sapid structure. Sui Lieviti is the unique expression of the Brut Nature wine produced on the hills of Valdobbiadene. The second fermentation takes place in the bottle, as in the classic method, but without desgorgement. Leaving the wine in contact with its yeasts, which remains at the bottom of the bottle, they naturally protect the integrity of the wine.
It is the historical expression of Prosecco Superiore Spumante, a fragrance of delicate aromas of white pulp fruit and mineral notes, hints of bread crust, white flowers, wisteria, hay. Over time, more complex and balsamic notes came out, deriving from the maturation with yeasts. The finesse and frankness of this wine, combined with the fine and persistent perlage, make it suitable for important occasions, both as an aperitif and to toast at the best moments. Very welcome to accompany fish-based lunches.

Really well-judged wine that starts with lovely aromatics of white stoned fruits, savoury and yeasty notes. The palate has a lovely creamy texture with nutty and caramel notes. Fresh with a long finish.
